what script to update Person record fields to ADS/AD (fully managed)

May I clarify the mechanism of Person record -> ADS -> AD

if i update the department of a person record, how the information being sync to ADS (fully managed) then AD user object. May i know which script is running for the update assuming the Person record is fully managed the AD account already

Dataflow is not handled via scripts but via templates. The templates will be triggered during the update of the person object if a column that leads to data flow is changed. So if you change Person.UID_Department any templates listening to that changes will be recalculated.

I am trying to do the migration, just don't want to change the fields at AD accounts

If you just do not want to change the data in AD (external), the easiest way to do that is to switch the target system (AD Domain) to read-only. In that case the data in the OneIM database has change but it will not provisioned.
