Yes you can increase the RAM on the SPP VM appliances.
I would match the HW specs which normally ship with 32 GB of Memory minimum

ok Tawfiq, thank you. Just the last fast question. Can this be done with vm active? must they be restarted after the ram increase? Or can ram be added with 'hot change'? please let me know if there are any specific details to follow. Thank you so much!
Hypervisors require VM appliance to be powered off to increase the RAM then you can power up after the VM settings are updated.
Example notes from VMWare KB:

Note: Once the memory assigned to the virtual machine has been increased, it will be immediately available within the guest operating system. No other manual changes or configurations should be needed.
